Ingredients
Glaze:
1/2 cup ketchup
2 teaspoon balsamic vinegar
1 tablespoon Worcestershire sauce
1 garlic clove, minced
2 tablespoons honey
1/4 teaspoon onion powder
black pepper
Meatloaf:
2 lbs ground beef
1 yellow onion, chopped
3 garlic cloves, minced
3 eggs
1 cup panko bread crumbs
1 packet instant French onion soup mix
2/3 cup canned crushed tomatoes
2 tablespoons Worcestershire sauce
1/4 tsp Tony's creole seasoning
1/4 teaspoon black pepper
9 slices bacon
Preparation
Directions:
1. Preheat oven to 375F. Spray a baking pan with nonstick cooking spray.
2. In a small bowl, stir glaze ingredients and set aside.
3. In a large bowl, combine all meatloaf ingredients and stir until completely mixed.
4. Form into a long loaf shape, patting lightly to keep it in a firm shape. Spread half of the glaze over entire meatloaf. Lay bacon strips across meatloaf with excess hanging over each side. The bacon should be almost overlapping.
5. Now, gently tuck bacon underneath both sides of meatloaf. Pour remaining glaze and spread evenly.
6. Bake for 1 hour to 1 hour 15 minutes the internal temperature must come to 165F.
7. Let the meatloaf rest for at least 15 minutes, it will slice better the longer it cools down.
