Vanilla Bean Granola

About the Recipe

Ingredients

2 cups oats

1 cup unsweetened coconut flakes

3/4 cup pecans, raw

3/4 cup sliced almonds, raw

1/2 teaspoon cinnamon

1/4 cup coconut oil

1 vanilla bean, split and seeded

1/4 cup maple syrup

1/4 cup coconut sugar

1/8 teaspoon sea salt

1/4 teaspoon almond extract

Preparation

Preheat oven to 300 degrees F. Line a baking sheet with parchment paper.

1. In a large bowl combine: oats, coconut, pecans, almonds, and cinnamon.

2. In a small pot combine: coconut oil, vanilla bean, and seeds, maple syrup, coconut sugar, and salt. Heat on medium-low heat stirring almost constantly.

 3. Once coconut sugar has dissolved, remove from heat, stir in the almond extract and carefully pour the hot mixture into the bowl with the rest of the ingredients. Stir to combine.

 4. Spread evenly onto the parchment lined baking sheet. Bake for 30-45 minutes stirring every 15 minutes until golden brown.

 5. Let granola cool completely and store in airtight containers.
